Easy Mexican omelet



2 eggs

1 pinch of salt and pepper

3 Tbsp salsa

1 tsp fresh chives

1 Tbsp plain Greek yogurt

1/4 cup feta cheese


Mix together the eggs, salt, and pepper in a bowl. Fry eggs on medium heat in a large frying pan. As eggs begin to cook, sprinkle feta over top. Flip one side over to encase the cheese. Plate omelet and add Greek yogurt, salsa, then chives.
